At the age of 15 in 1960, he embarked on his culinary career as an apprentice chef at the esteemed Relais of Poitiers hotel. Joel honed his skills and acquired a diverse range of regional techniques during his apprenticeship with the ‘Compagnon du Tour de France’ in 1966.
In 1976, he assumed the position of head chef at Hotel Concorde La Fayette. Between 1987 and 1990, he made frequent appearances on French television.
